Summer would not be the same without a good BBQ!  BBQ recipes are also really easy to make healthy—and tasty. This BBQ chicken sweet potato sandwich is the perfect sweet and savory alternative to the classic favorite, pulled pork.  They’re hearty and use healthy ingredients. Best of all, they can be made in under 5 minutes if you use Trifecta’s ready-to-eat chicken breasts.

Ingredients

  • 5 Small Sweet Potatoes
  • 4 4oz Trifecta Chicken Breasts
  • 1/2 Cup Sugar Free BBQ Sauce
  • 1 Red Onion
  • 2/3 Cup of Low Fat Mozzarella
  • 1/3 Cup of Fresh Cilantro

First, soften each sweet potato up in the microwave for approximately 5 minutes.  While you’re waiting for them to cool, shred the chicken up using two forks and dice the onions. (Probably obvious, but it needs to be said: make sure you’re dealing with cooked, ready-to-eat chicken!)  Mix both together with the BBQ sauce and salt. Once the potatoes have cooled, cut them lengthwise into 1 1/2 inch thick slices and cook them in a pan until golden. Sprinkle the cheese on top and allow to melt, and then add the BBQ’d chicken.  Top with fresh cilantro and, if you want, serve with low fat sour cream or a light ranch dip!
