Ingredients:

For the burgers:

  • 4 Portobello mushrooms
  • 4 ½ slices red onion
  • 2 red peppers
  • 4 tbsp basil mayonnaise (directions below)
  • 4 buns
  • lettuce leaves

For the marinade:

  • ¼ cup balsamic vinegar
  • 1 tbsp + 1 tsp Bragg Liquid Aminos
  • 1 tbsp water
  • ½ tsp garlic
  • â…› tsp ground pepper
  • 1 tsp rosemary

For the basil mayonnaise:

  • 12 oz firm silken tofu
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp onion powder
  • ¾ tsp garlic powder
  • ¼ tsp sea salt
  • â…› tsp ground pepper
  • ¾ cup fresh basil leaves

Set the oven to 400 degrees or prepare the grill on a medium to high heat. Line a baking sheet with parchment paper and put it to the side. Start by making the marinade by mixing all the ingredients in a bowl. Next, wipe the mushrooms with a damp towel. Place the mushrooms, red peppers, and red onions on the baking sheet. Brush the vegetables with the marinade.

To use the grill, cook the mushrooms, red peppers, and red onions for about ten minutes until lightly browned. Then, turn all vegetables and baste with the marinade. Cook for another seven minutes, remove from the grill, and baste again.

If you’re using the oven, cook the vegetables for about ten minutes. Then, baste and cook for another ten minutes until lightly browned. Remove from the oven and baste again. Finally, toast your buns and assemble your burger, starting with a spread of basil mayonnaise.

To make the basil mayo, blend all ingredients except for the basil in a food processor on medium speed. When the mixture is creamy, add the basil and mix again until thoroughly blended.

Build your burgers on the buns. Top with fresh lettuce leaves.
