Grilled Shrimp Fajita Recipe

This first recipe cooks shrimp, peppers, and onions in foil for a savory blend, bursting with flavor.  Cooking the fajitas in aluminum foil locks in the juices, making them extra satisfying and delicious. It also enables you to easily throw them on the grill or cook them in the oven, depending on what you prefer.  Everything cooks together all at once, so you don’t have to worry about any of the ingredients overcooking before others are ready.

When the shrimp and veggies have finished cooking, you can divide them up evenly in Mama Lupe Low Carb tortillas and serve them immediately.   Mama Lupe Low Carb tortillas are a great tasting, low carb alternative to regular tortillas.  Other alternatives are lettuce wraps or a fresh bed of greens. Ingredients

1 ½ Trifecta boxesTrifecta shrimp (or 1 ½ pounds of regular shrimp peeled and deveined) 
1red bell pepper (thinly sliced)
1green bell pepper (thinly sliced)
1onion (thinly sliced)
2 tablespoonsavocado oil
2 tablespoonstaco seasoning
2limes
garnishfresh cilantro leaves

Directions

Preheat your grill on high heat.  If you want to cook the fajitas in the oven instead, you can also preheat your oven to 400 degrees Fahrenheit

  1. Cut four sheets of foil that are 12 inches long.
  2. Combine shrimp, bell peppers, and onion in a large bowl and toss with oil, taco seasoning, and lime juice.  If you are using Trifecta shrimp, toss all of the ingredients as usual. But, don’t add the shrimp until Step 5.
  3. Divide the mixture into four equal portions and add to the center of each piece of foil.
  4. Fold the sides of the foil over the ingredients, sealing them inside.  
  5. Place the packets on the grill and cook about 12 minutes. If you are using Trifecta Nutrition shrimp, throw the shrimp into the packets for the last few minutes. Do this so that they are warmed and can mix with the juices from the vegetables.
  6. As soon as they are done, serve the shrimp and veggies immediately in tortillas!

Oven-Fried Squash Recipe

This second recipe drizzles coconut oil over a blend of squash and zucchini, frying them until crispy.  The fried veggies are then tossed in balsamic vinegar and served. Such a simple recipe—but so delicious!  Fried foods often get a bad reputation for being unhealthy and high in carbohydrates. However, these veggies aren’t battered, making them low carb.  They are also fried in coconut oil, which has several health benefits for heart health and weight loss. Coconut oil also withstands higher heat than olive oil or canola oil, and as a result, is healthier to cook with.  In the end, this fried treat ends up only being 52 calories per serving. It is great as an appetizer or a side dish.

Ingredients

1 tablespooncoconut oil 
2 cupsTrifecta Nutrition squash (half of a Trifecta box)
2 cupsTrifecta Nutrition zucchini (half of a Trifecta box)
2 tablespoonsbalsamic vinegar

Directions

Preheat your oven to 400 degrees Fahrenheit. 

  1. Lay the zucchini and squash onto a baking sheet and drizzle with coconut oil.
  2. Bake for approximately 15 minutes, turning the veggies over after they have been baking for 7 minutes.
  3. When they start to look crispy, remove them from the oven.  Allow them to cool, and toss them in the balsamic vinegar before serving.
